Ever since I was a kid, my mom made this no-bake cherry pie for the holidays. I've been obsessed with parfaits lately, so voila Cherry Cream Cheese Parfaits!
Ingredients
Crumbs:
9 graham crackers, about 1 pkg
1/8 cup sugar
1/4 cup butter, melted
Cream Cheese Mousse:
4 oz (1/2 pkg) cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract, plus 1/2 tsp
1 pkg Dream Whip whipped topping mix
1/2 cup milk
1 can (21 oz) cherry pie filling
4 standard wine glasses
Directions
In food processor, break graham crackers into pieces and process until fine crumbs. Add melted butter and sugar (tip: easiest to just microwave butter and sugar together in a small bowl). Blend in processor until uniform texture. Set aside.
In a small bowl, cream softened cream cheese with powdered sugar and 1 tsp vanilla until well blended. Meanwhile, prepare Dream Whip according to package directions, with 1/2 cup milk and 1/2 tsp vanilla. After it's whipped to stiff peaks, add cream cheese mixture and using mixer blend until well combined.
Assembly: In bottom of each wine glass put one good spoonful of crumb mixture, lightly tamp down. Add two spoonfuls of cream cheese mousse, spreading evenly. Top with couple spoonfuls of cherry pie filling. Do another layer of crumbs, mousse, and finish with the rest of the cherries. Add a final little sprinkle of graham cracker crumbs.
